1. Classic Vegetable Pulao



Ingredients 

• Basmati rice (1 cup) 

• Mixed vegetables (carrot, beans, peas, potato – 1 cup) 

• Onion (1) 

• Ginger-garlic paste (1 tsp)

• Green chilies (2)

• Whole spices (bay leaf, cardamom, cinnamon, cloves)

• Turmeric (¼ tsp)

• Garam masala (½ tsp)

• Salt

• Water (2 cups)

• Ghee/oil.

Method

  1. Heat ghee/oil in a pan, add whole spices.
  2. Sauté onions, ginger-garlic paste, and green chilies until golden.
  3. Add vegetables, turmeric, garam masala, and salt. Cook for 2 minutes.
  4. Add washed rice and water, bring to a boil.

2. Paneer Pulao



Ingredients

 • Same as above + paneer cubes (½ cup)

 • Cumin seeds (1 tsp)

 • Coriander leaves.

Method

  1. Follow the classic pulao method but sauté cumin seeds before adding onions.
  2. Add paneer cubes after the vegetables and lightly fry them.
  3. Cook as usual and garnish with coriander leaves.

3. Coconut Milk Pulao



Ingredients

• Basmati rice (1 cup)

• Coconut milk (1 cup)

• Water (1 cup)

• Mixed vegetables, (onion, green chilies) 

• Ginger-garlic paste

• Whole spices

• Salt

• Ghee/oil

Method

  1. Sauté whole spices, onions, and ginger-garlic paste in ghee/oil.
  2. Add vegetables, washed rice, salt, and mix well.
  3. Pour coconut milk and water, bring to a boil.
  4. Cover and cook for 15 minutes on low heat. Serve warm.

4. Tomato Pulao



Ingredient

• Basmati rice (1 cup)

• Tomatoes (2, chopped)

• Onion

• Green chilies

• Ginger-garlic paste

• Cumin seeds (1 tsp)

• Turmeric (¼ tsp)

• Garam masala (½ tsp)

• Salt

• Water (2 cups)

• Ghee/oil.

Method

  1. Heat oil, sauté cumin seeds, onions, and green chilies.
  2. Add ginger-garlic paste and chopped tomatoes, cook until soft.
  3. Add spices, salt, and washed rice. Mix well.
  4. Pour water, cover, and cook for 15 minutes. Serve hot.

5. Mint Pulao (Pudina Pulao)



Ingredients

• Basmati rice (1 cup)

• Mint leaves (½ cup) 

• Onion, green chilies

• Ginger-garlic paste

• Cumin seeds

• Whole spices

• Salt

• Water (2 cups)

• Ghee/oil.

Method

  1. Blend mint leaves and green chilies into a paste.
  2. Heat ghee/oil, sauté cumin seeds, onions, and ginger-garlic paste.
  3. Add the mint paste, mix well, then add washed rice.
  4. Pour water, cover, and cook for 15 minutes. Serve fresh.
