🍽️ 1. Classic Yemeni Mutton Mandi
Ingredients
For Mutton

500g mutton (bone-in)

1 tbsp mandi spice mix (see below)

Salt to taste

1 tsp turmeric

1 tbsp ghee or oil
For Rice

2 cups basmati rice (soaked 30 min)

1 large onion (sliced)

2 tomatoes (chopped)

1 green chilli
-
2 bay leaves, 4 cloves, 1 cinnamon stick, 4 cardamoms

1 tsp cumin seeds
-
1 tsp black pepper
-
3 cups water or stock
-
Salt to taste
For Mandi Spice Mix
-
1 tsp cumin powder
-
1 tsp coriander powder
-
1 tsp cinnamon powder
-
½ tsp clove powder
-
½ tsp black pepper
-
½ tsp cardamom powder
Instructions

Cook Mutton: Marinate mutton with salt, turmeric, and half of the mandi spice mix for 30 minutes. Then cook with water until tender (pressure cook for faster result).

Prepare Rice: In a large pot, heat ghee. To soften the ingredients, sauté the tomatoes, whole spices, and green chilli.
Add salt, soaked rice, and mutton stock (or water). Cook until rice is done.
Final Assembly: Place cooked mutton pieces on top. Sprinkle remaining mandi spice mix.

Cover and steam on low for 10 minutes.

**Optional**: To add a smoky flavor, place a piece of charcoal in a foil cup with the ghee in the pot.
🍖 2. Smoky Tandoori Mutton Mandi
Ingredients

Same as classic, plus 1 tbsp tandoori masala and red chilli powder
Instructions

Marinate mutton in tandoori masala, red chilli, yogurt, and salt. Roast/grill or bake the mutton for charred flavor.

Prepare rice as in the classic recipe.

Place grilled mutton over the rice and steam with a smoking method (hot charcoal + ghee).

Garnish with fried onions and serve.

1 tbsp ginger-garlic paste

Curry leaves

Pressure cook mutton with chilli powder, turmeric, salt, and ginger-garlic paste until tender.

Fry onions with curry leaves, tomatoes, and whole spices. Add stock and rice.

Ingredients

Classic recipe + ½ cup coconut milk and 2 tbsp grated coconut
Instructions

Cook mutton with turmeric, salt, and pepper.

Sauté spices and onion in coconut oil. Add grated coconut and fry until golden.

Add rice, water + coconut milk mixture, and cook.

Add mutton on top and steam. Garnish with mint and fried coconut slivers.

Ingredients

Classic recipe + 1 tbsp garlic paste, 2 tbsp butter
Instructions

Marinate and cook mutton with garlic paste, butter, salt, and mandi spice mix.

Sauté rice ingredients in butter + little oil. Add garlic paste while frying.

Layer rice and mutton. Steam on low heat for 10–15 minutes.

Add a final dollop of garlic butter on top before serving.
