  • Spring onion – ½ cup (chopped)

  • Oil – 2 tbsp

For Sauce

  • Soy sauce – 2 tbsp

  • Vinegar – 1 tbsp

  • Hoisin sauce – 1 tbsp (optional)

  • Sugar – 1 tsp

  • Cornflour – 1 tsp

  • Water – ¼ cup

Instructions

  1. Mix all of the sauce ingredients together in a bowl, stir, and set aside.

  2. Heat oil in a wok. Fry dried red chilies until they darken.

  3. Add garlic and ginger. Sauté for a few seconds.

  4. Add chicken cubes and stir-fry on high heat until cooked.

  5. Pour in the prepared sauce and toss well.

  6. Add roasted peanuts and spring onions. Cook for 2–3 minutes.

  • Cornflour slurry – 1 tsp cornflour + 2 tbsp water

Instructions

  1. Mix chicken with cornflour, flour, egg, salt. Fry until golden. Set aside.

  2. Sauté the garlic, onion, and green chilies in a wok. 

  3. Vinegar, chili sauce, soy sauce, and ketchup should be added. Blend well.
