# 1. **One-Pot Spinach and Rice**



**Ingredients**

- 1 cup rice (brown or white)

- 1 tablespoon olive oil

- 1 onion, chopped

- 2 garlic cloves, minced

- 3 cups fresh spinach (or kale)

- 1 can of chickpeas (drained and rinsed)-

-  2 cups vegetable broth

- 1 teaspoon cumin

- Salt and pepper to taste

- Lemon wedges for serving


**Instructions**

1. Heat oil in a pot and sauté the onion and garlic until softened.

3. Pour in the vegetable broth, bring to a boil, then reduce heat and cover. Simmer for 15-20 minutes.
