### 1. **Lemon Rice**


**Ingredients:**

- 1 cup rice

- 2 tbsp oil

- 1 tsp mustard seeds

- 1/2 tsp turmeric powder

- 1/2 tsp cumin seeds

- 1-2 green chilies, slit

- 1/4 cup peanuts

- 1/4 cup chopped coriander leaves

- 1 tbsp lemon juice

- Salt to taste


**Instructions:**

1. Cook the rice and let it cool.

2. Heat oil in a pan, add mustard seeds, and let them splutter.

3. Add cumin seeds, green chilies, and peanuts. Sauté for a minute.

4. Add turmeric powder and mix well.

5. Add the cooked rice and salt, and mix thoroughly.

6. Remove from heat, stir in lemon juice and chopped coriander leaves.

7. Serve warm.



### 2. **Curd Rice**


**Ingredients:**

- 1 cup rice

- 1 1/2 cups curd (yogurt)

- 1 tbsp oil

- 1 tsp mustard seeds

- 1/2 tsp cumin seeds

- 1/4 tsp asafoetida (hing)

- 1-2 green chilies, chopped

- 10-12 curry leaves

- 1/4 cup chopped coriander leaves

- Salt to taste


**Instructions:**

1. Cook the rice and let it cool.

2. In a bowl, mix the cooked rice with curd and salt.

3. Heat oil in a pan, add mustard seeds, cumin seeds, and asafoetida.

4. When the seeds splutter, add green chilies and curry leaves.

5. Sauté for a minute and then pour this tempering over the curd rice.

6. Garnish with chopped coriander leaves.

7. Serve chilled or at room temperature.



### 3. **Tamarind Rice (Puliyodarai)**


**Ingredients:**

- 1 cup rice

- 2 tbsp tamarind paste

- 2 tbsp oil

- 1 tsp mustard seeds

- 1/2 tsp fenugreek seeds

- 1/2 tsp turmeric powder

- 1-2 dried red chilies

- 1/4 cup peanuts

- 10-12 curry leaves

- Salt to taste


**Instructions:**

1. Cook the rice and let it cool.

2. Heat oil in a pan, add mustard seeds, fenugreek seeds, and dried red chilies.

3. Add curry leaves and sauté for a minute.

4. Add tamarind paste and turmeric powder, and cook for a few minutes until the raw smell disappears.

5. Add peanuts and salt, and mix well.

6. Stir in the cooked rice and mix thoroughly.

7. Serve warm.



### 4. **Vegetable Biryani**


**Ingredients:**

- 1 cup rice

-1 cup blended vegetables (carrots, beans, potatoes, peas)

- 1 large onion, thinly sliced

- 2 tomatoes, chopped

- 2 tbsp oil

- 1 tsp ginger-garlic paste

- 1/2 tsp turmeric powder

- 1 tsp biryani masala

- 1/2 tsp red chili powder

- 1/2 tsp garam masala

- 10-12 curry leaves

- Salt to taste  

- Fresh coriander and mint leaves for garnish

**Instructions:**

1. Cook the rice and set aside.

2. Heat oil in a pan, add onions, and sauté until golden brown.

3. Add ginger-garlic paste and cook for a minute.

4. Add chopped tomatoes, turmeric powder, biryani masala, red chili powder, and salt.

5.Cook until the tomatoes are delicate and oil isolates.

6. Add mixed vegetables and cook until tender.

7. Stir in the cooked rice and mix well.

8. Garnish with coriander and mint leaves.

9. Serve hot.

**Ingredients:**

- 1 cup rice

- 1 cup grated coconut

- 2 tbsp oil

- 1 tsp mustard seeds

- 1/2 tsp urad dal

- 1/2 tsp chana dal

- 1-2 green chilies, chopped

- 10-12 curry leaves

- 1/4 tsp turmeric powder

- Salt to taste


**Instructions:**

1. Cook the rice and let it cool.

2. Heat oil in a container, add mustard seeds, urad dal, and chana dal.

3. When the seeds splutter, add green chilies and curry leaves.

4. Add turmeric powder and grated coconut. Sauté for a few minutes.

5. Add the cooked rice and salt, and mix thoroughly.
